 All 4 classes - start at 6.30pm sharp
This is a great place to start for the beginning gourmet or those wanting to refresh their kitchen skills.

This fantastic course will teach or refresh everything you need to know about the following 

Week 1 Knives - how to sharpen and look after them, what each knife is used to cut. How to cut and identify vegetable cuts and what dishes they are used in. How to debone and use a whole chicken. At the end of the night we will utilize all our vegetable and chicken cuts to produce a great stir-fry.

Week 2 Stocks and Sauces- We explore all the great basic sauces, Garlic cream reduction, Hollandaise, Mornay, Caesar dressing and many more. All sauces are accompanied by appropriate dishes that complement these sauces.

Week 3 Meat -Explores the different cuts and uses for meat, and why certain cuts are necessary for our diet. We make Beef Bourguignon and Beef Wellington along with all the accompaniments.

Week 4 Pastry - All things pastry, how to use or make Puff Pastry, Shortcrust Pastry, Sweet and Savory Pastry Snacks, Profiteroles and Tartlets 

This class is $300.00 all inclusive so why not come along and learn some new skills or just refresh your old ones.

  • Cauliflower Risotto (risotto ai cavolfiori)
    This is an absolutely delicious recipe. It's quite unusual, and the best thing about it is that it makes a hero of the much-underloved everyday cauliflower, with the added bonus of really crunchy pangrattato sprinkled on top - it gives an amazing flavour kick.
  • Whole Baked Fish stuffed with fennel and lemon
  • Bolognese Polenta, Fig and Apple Cake (bustrengo)
    This is a superb moist cake, a bit like a clafoutis in France, but by adding breadcrumbs and using polenta it becomes very much like an Italian bread and butter pudding. It's something that Italians would cook in the embers of the fire after dinner.

After this Janine will teach you the secrets of tempering your chocolate at home, making ganach and turning out a professional truffle, and also moulding and what to do with those leftovers.

TEJAL VYAS

Pure Vegetarian Cuisine
I was born in Anmedabad which is a major city in Gwarat, India.
I started cooking at age 7, helping my mum at home. By age 9 I was
able to cook curries and breads. After 22 years I moved to Nairobi,
Kenya, and it was here that I really experimented with vegetarian
cooking and found I could also cook international cuisines in a
vegetarian manner. After marriage, I moved to the UK for 13 years,
and ran a small catering business from home, where I catered for parties
and small dinners and also made eggless desserts. I also used to teach
vegetarian cooking to small groups of people in London and found it most
satisfying. I have been here in Townsville for 2 years and hope to bring
the art and culture of vegetarianism to the wonderful people of this lovely
city.

Russell a qualified chef for many years is currently a Hospitality trainer at AXIOM COLLEGE Townsville and in the past has spent time as Operations and Assistant Operations manager for such renowned restaurants as YOTZ Bar and Grill the Strand and Cuisinne to Go Catering. Both very well regarded Local Townsville business's.  Russell has also owned and operated his own Restaurant in Brisbane and was also a member of the Royal Australian Airforce. He brings to the deStudi cooking Team a well balanced and broad spectrum of cooking styles from the Classis's to Modern Australian. Please come along to Russell's first French Classic's Class and welcome him to the team.
